JEFFERSONVILE — Louisville-based restaurant group Wild Eggs will open its first Southern Indiana location along Veterans Parkway in Jeffersonville this spring.

The 4,400-square-foot restaurant will be located at 1450 Veterans Parkway in the Jeffersonville Town Center and will employ approximately 50 people. The Jeffersonville location will feature the Wild Eggs traditional eclectic atmosphere consisting of bright and cheery hues of robin’s egg blue and pastel yellows, and will include signature design elements like their custom-designed egg wall, breakfast bar and specially commissioned egg artwork, according to a press release. The restaurant will include a patio dining area and will seat an estimated total of 130 guests.

The restaurant will be owned and operated by Wild Eggs’ newest franchisee, Hamburger & Eggs, LLC. Chris Hamburger, formerly the head golf professional at Valhalla Golf Club, will manage and oversee the day-to-day operations of the restaurant.

“We have plans to develop a total of three Wild Eggs locations in the greater Louisville and Southern Indiana area," Hamburger said in the release.

The first Wild Eggs restaurant opened in Louisville in 2007 and has since expanded to a total of eight locations in Louisville, Lexington, Bowling Green and Colorado.

Wild Eggs is open daily for breakfast and lunch from 6:30 a.m. to 2:30 p.m. weekdays and 7 a.m. to 3 p.m. on weekends.
